Probably not the most commonly used ingredient on a pizza but we are changing things up and making it a highlight on this month’s special – eggplant!
The key ingredient is first cut into a standard ring size and tossed in a large bowl of mixed herbs, olive oil and balsamic vinegar then popped into our oven to achieve a touch of caramelisation. When an order of the Mediterranean Eggplant Pizza comes through, we would smear a layer of mascarpone sauce on the pizza base and lay rings of balsamic marinated eggplant, garlic pesto (exactly the same one used on our Crispy Garlic Bread) and bocconcini.
After slight stretching of the base on the pizza peel, in goes the pizza to bake! Once it’s done, we then finish it off with toppings of toasted pine nuts, sultanas, parmesan shavings and fresh rocket leaves.
